The grapes are transported to the winery in small boxes. This is followed by total destemming, crushing, and transfer to stainless steel tanks where fermentation takes place at a controlled temperature of around 24 to 26°C with careful maceration until all sugars are exhausted. After alcoholic fermentation, the wine is transferred to another stainless steel tank and remains there until the end of malolactic fermentation. It ages only in stainless steel until bottling. Afterwards, it undergoes only a light fining with vegetal agents and then filtration immediately before bottling to preserve its full aromatic potential. Thus, being a product with only natural stabilization, it is susceptible to sediment formation over time in the bottle.
