Its origins date back to distant times in Portuguese history. The current, inadequate, less noble, and discredited image of a rustic drink full of history had to be restored. After four generations of producing traditional pomace brandies, the time had come to also produce a pomace brandy that combined the best of a traditional brandy with more modern details, without losing the soul of a pure Portuguese pomace brandy, specifically from Bairrada. The best grape pomace from the vinification of the best Baga wines of Bairrada was selected, and the entire vinification and maturation process was carefully monitored. Several slow and detailed distillations were carried out in copper stills using direct steam distillation, and the best distillates were selected, both through tasting and analytically in the laboratory.

Exam Notes

Aroma: Fresh and vinous aroma.

Taste: It has notes of fresh pomace and hints of grape must, combined with a good floral component (some orange blossom) and dried fruit.
