Tasting Notes
Color: slightly violet red
Aroma: intense, dominated by red fruits, floral notes (violet) and spices.
Palate: Intense and with a very characteristic profile, it is a persistent wine, with a fresh and long finish.
Food Pairing: Bafarela Reserva is a surprising wine that pairs very well with traditional Portuguese cuisine dishes, a variety of meats, cheeses and flavorful pasta. Try it as an appetizer with cured and spicy cheeses.
Serving: It should be opened a little before consumption to allow it to breathe and develop at its best. Over time, it may create sediment requiring decanting. Serve between 17ºC and 18ºC.
Storage: The bottle should be kept lying down, in a cool, dry place, away from light.
Winemaking:
The harvest took place in September. With selection criteria in the vineyard, the grapes were fully destemmed and crushed. After cold pre-fermentative skin contact for 48 hours, fermentation occurred in stainless steel tanks with controlled temperature and with a total maceration exceeding 40 days, but without excessive extractions. The wine then went into stainless steel tanks, where malolactic fermentation occurred, and then aged for 10 months in 500-liter French oak barrels, of first, second and third use.
