Cortes de Cima is situated on the slopes of the 400m high mountains of the Serra do Mendro. The great diversity of terroirs in our vineyards varies between Mediterranean brown clay over limestone, mica schist, quartz-rich granite and well-graded gravel.
The oldest vines, surrounding the house and the winery, were planted in 1991. The names of the wines originate from these vineyard plots – “Cortes de Cima”, “Chaminé de Gião” and “Courela dos Pageis”.
The meaning of Cortes de Cima: An open, enclosed area or covered enclosure where livestock is kept, on top of a hill.
Exam notes:
Citrus color. Complex, intense aromas of exotic fruits, banana, and hints of spices, vanilla, and toast. The wine has an elegant acidity and a persistent finish.
Serving temperature: Serve at 10-12ºC.
Pairing: Good with seafood, grilled fresh fish, white meats, and as an aperitif.
Winemaking: A single-varietal wine made from the Alvarinho grape variety. After harvesting, the grapes were sent to the winery where they were destemmed, pressed, and then decanted at low temperatures for 24 hours. Fermentation took place at controlled temperatures for 15 days. The wine aged in French oak barrels for 6 months in contact with the fine lees and underwent regular bâtonnage. The wine was cold-stabilized and filtered before bottling.
