Quinta da Covela is located in the heart of the Vinho Verde region, in Baião, an amphitheater of privileged natural beauty, in an area that is the birthplace of the iconic Avesso grape variety.

With certified organic production methods, we are recognized for the quality and purity of our white and rosé wines. We work daily to protect biodiversity, with a holistic vision that leads us to embrace organic farming – in the vineyards, but also in our orchards and vegetable gardens – as the natural way to interact with the ecosystem that surrounds us.

For this wine, the harvest was organized by vineyard plots to ensure picking at the right time. Transport in small boxes to avoid crushing. Skin maceration. Gentle pressing.

Spontaneous fermentations in stainless steel tanks with temperature control. Aging on fine lees until bottling. Light filtration before bottling.

Exam Notes

Bright pale pink color. Floral and delicate aromas, with notes of orange blossom and violets. The granitic minerality notes of the region are present, giving this wine an interesting complexity. On the palate it is dry with balanced acidity and creamy with an excellent mouthfeel. The finish is long and persistent.

Winemaking: Hand-harvested, plot by plot, allowing the right grapes to be picked at the right time. Transported in small boxes. No enzymes used. Spontaneous fermentation. Fining with bentonite when necessary. Light filtration. Temperature-controlled fermentation in stainless steel tanks. Aged on the lees until mid-January.

Pairing: This is an ideal wine to accompany simple grilled fish or seafood, and even sushi and sashimi. Its freshness and light character also make it a great wine to pair with appetizers or to be enjoyed outdoors as an aperitif in the company of family or good friends.
