Exam Notes
Color: Citrine
Aroma: Fresh aromas, ripe white fruit, floral and citrus notes.
Taste: On the palate, there is a good balance between structure and volume, showing typical minerality. The brief aging in wood imparted some toasty and sweet notes, giving the wine more volume and gastronomic potential without losing its vivacity.
Pairing: It can accompany various types of dishes, such as seafood, all fish dishes, or even lighter meat dishes.
Service: Serve at 10ºC
Storage: Bottles should be stored horizontally in a dark, clean, well-ventilated place with normal, moderate temperature and constant humidity conditions.
Winemaking: The harvest is done by hand, and the grapes are transported to the winery in small boxes. This is followed by total destemming, crushing, pressing, and cold settling in stainless steel tanks. The completely cleared must is then transferred to other stainless steel tanks where it ferments at a controlled temperature of around 15°C until all sugars are exhausted. After alcoholic fermentation, the wine is sulfited. A few days later, it is transferred to another stainless steel tank and remains there for a few months with light "batonnage" (leaf stirring). When preparing for bottling, it undergoes only a light fining with mineral agents and then filtration immediately before bottling to preserve its full aromatic potential.
