Exam Notes
Color: Ruby-colored wine
Aroma: Very complex, excellent evolution in the bottle. It presents an elegant bouquet dominated by blackcurrant, spices, tobacco box and very well-integrated vanilla notes.
Palate: High concentration and body, ripe tannins, excellent balance and a surprisingly long finish.
Pairing: Goes well with rich meat dishes, game, and strong cheeses.
Service: It should be consumed at 16-18°C.
Winemaking: After selecting plots that showed balanced ripeness, the grapes were harvested manually and carefully, and subjected to crushing and total destemming. This was followed by a 24-hour pre-fermentation maceration period at 30°C. Selected yeasts were used to induce alcoholic fermentation, which took place between 22 and 24°C for a minimum of 10 days. Malolactic fermentation was then induced with temperature control. Once malolactic fermentation was complete, the wine was transferred to new French oak barrels where it remained for 12 months. After bottling, the wine aged for one year in the bottle.
