Tasting Notes

Color: Presents a pink color with salmon hues, fine and elegant bubbles.

Aroma: On the nose, it presents aromas of ripe wild berries with a slight toastiness.

Palate: On the palate, it offers a creamy mousse with a lively and balanced acidity. Fresh and pleasant finish.

Vinification: Vinified in open spout with light pressing. Cold decantation. Cold alcoholic fermentation in stainless steel tanks with controlled temperature. The second fermentation lasts for 6 months, and takes place in stainless steel vats with fine lees and periodic bâtonnage.

Food Pairing: Excellent as an aperitif and with oysters and sushi. Also pairs well with fish, seafood, or pasta dishes.

Serving: Serve at a temperature between 6⁰ and 8⁰C.
