Tasting Notes

Color: Intense ruby with violet reflections.

Aroma: Ripe red fruit aroma well integrated with notes of spice and balsamic.

Palate: Balanced, round, fruit and spice flavors. Good structure of well-polished tannins.

Food Pairing: Mediterranean food in general, pasta, lamb, white meats and soft cheeses.

Serving: Serve at 16ºC

Vinification: Mechanical harvest during the night. Total destemming. Cold pre-fermentative maceration for 48h. Fermentation with controlled temperature (22-28ºC) in stainless steel tanks. Post-fermentative maceration for 5 to 10 days. Malolactic fermentation in stainless steel tanks with French oak staves.

Aging: 50% of the wine in 400 L French oak barrels for 6 months.
