Exam Notes

Color: Intense ruby ​​color with violet reflections.

Aroma: Ripe aroma of red fruits well integrated with notes of spices and balsamic.

Taste: Balanced, rounded, with fruit and spice flavors. Good structure with well-polished tannins.

Pairing: Mediterranean food in general, pasta, lamb, white meats and soft cheeses.

Service: Serve at 16ºC

Winemaking: Mechanical harvesting during the night. Total destemming. Pre-fermentation cold maceration for 48 hours. Fermentation with controlled temperature (22-28ºC) in stainless steel vats. Post-fermentation maceration for 5 to 10 days. Malolactic fermentation in stainless steel vats with French oak staves.

Internship: 50% of the wine is aged in 400L French oak barrels for 4 months. 

Alcohol content: 14% vol.
