At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of clay amphorae for grape fermentation. The essentials of amphora winemaking have changed little in recent centuries. In this wine, a small portion is made according to this Roman process: the red grapes are previously foot-trodden and destemmed by hand on a table called a "ripanço table". Then, a small part of the must, skins, and stems are fermented in clay amphorae, and another part in lagares (traditional stone vats). The remainder of the wine is fermented in stainless steel tanks. The use of amphorae imparts spices and a third dimension to the wine. After fermentation, the wine undergoes a 4-week skin maceration, followed by 9 months of aging in French and American oak barrels.
