Aroma: Impressive bouquet of red fruits, strawberry and some raspberry, with a strong mineral note.

Taste: Very crisp palate, fine bubbles with lots of mousse in the mouth, fresh and full structure, light fruitiness and very good body with some sweetness.

Winemaking: Vinified using open vats with very light pressing in a vacuum press, in order to obtain a must yield that does not exceed 60%. This is followed by fermentation in stainless steel tanks. As the second fermentation occurs in the serving bottle.

Internship: The wine ages for 3 to 6 months on its lees before the necessary finishing operations are carried out.

Pairing: This wine is ideal to accompany a variety of dishes, most notably roast suckling pig, even when served with orange, as the absence of tannins does not clash with the citrus flavor of the orange. It also pairs well with fish, seafood, and oven-roasted meats, due to its high acidity which balances the flavors of these delicacies.

Service: It should be served at around 8ºC to avoid destroying the aromas of the grape variety.
