Exam Notes

Citrus color, revealing fine bubbles. On the palate, the creamy mousse, intensified by lemony acidity, lends it enormous elegance and lightness.

Winemaking: The harvest is done manually. Fermentation takes place in stainless steel tanks at a controlled temperature (12-14ºC). After a short aging period in stainless steel, the second fermentation takes place in the bottle for a minimum of 9 months, followed by riddling and, finally, disgorgement.

Pairing: Ideal to accompany smoked fish and roasted poultry.

Serving: To preserve the characteristics of this wine, it is recommended to consume it at 6-8°C.
