Winemaking: Pressing of the grapes and settling at 10ºC for 48 hours. Fermentation in new 500-liter French oak barrels, and aging in the same barrels for 8 months .

Exam Notes

Yellowish-green color. Intense, citrusy aroma with noticeable notes of new wood. Very fresh with great aging potential. Intense flavor with great complexity and perfect acidity. Concentrated on the palate, white fruits, wood, very balanced with a fine acidity, mineral and long finish.

Pairing: Goes well with oven-baked fish, cod, shellfish, sushi, and also soft sheep's cheese.

Service: Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 10-12°C.
