Palate: A wine with a structured and fresh palate. It shows freshness and minerality in balance with good acidity and volume, unctuous and complex, giving it great gastronomic potential.
Pairing: This is a gastronomic wine that can accompany various types of dishes, such as seafood, all fish dishes, or even lighter meat dishes and cheeses.
Service: Serve at 12ºC
Preservation: Due to the characteristics of the grape variety and winemaking processes, this is a white wine that can be drunk now but also has good aging potential in the bottle, where it will increase its complexity on the palate and nose.
Winemaking: The harvest is done by hand, and the grapes are transported to the winery in small boxes. This is followed by cold crushing with whole grapes in a press, draining in a press, and decantation in stainless steel tanks at low temperature. The cleared must is then transferred to French oak barrels until the end of alcoholic fermentation. Afterwards, the wine remains in the barrels for a few more months with light "batonnage" on fine lees until bottling, when it undergoes only a light fining with mineral agents and then a light filtration immediately before bottling to preserve its full aromatic potential. Thus, being a product with only natural stabilization, it is susceptible to sediment formation over time in the bottle.
