Color: Great depth of color, violet and dark red.
Aroma: High concentration of ripe red fruit aromas, black cherry, and plum.
Taste: Traditional elegance with a touch of raspberry from the wines of the Vale D. Maria.
Pairing: Ideally paired with oven-baked meat and fish dishes. The producer prefers pairing it with mushroom dishes, whether risotto, pasta, or pizza. Delicious with cheeses, particularly cow's milk cheeses, due to its freshness and soft tannins.
Conservation: Wine ready to drink now or to age in the bottle.
Service: Serve at 12-18ºC
Winemaking: All the grapes from Quinta Vale D. Maria “Vinha da Francisca” are foot-trodden in lagares (traditional stone troughs) and then ferment for 7 to 10 days at temperatures of 22° to 27°. The wines are then racked into new 225L French Allier oak barrels (François Frères, Taransaud, and others), where malolactic fermentation takes place.
Internship: 21 months in the same barrels. The final selection of barrels and the blending of the wine takes place about a month before bottling.
