Exam Notes

Color: Intense and brilliant ruby

Aroma: The senses begin to awaken to a finely tuned aroma of graphite, game, black fruit (sloe, blackberry, blueberry) and some red fruit (fresh raspberry and raspberry jam), damp earth and stoney minerality.

Taste: Great elegance on the palate, excellent acidity and a superb level of tannin, true to the region. Classic style, with great freshness on the finish.

Pairing: Ideal to accompany roast kid and soft cheeses.

Serving: Best served at 16-18°C.

Winemaking: The grapes were harvested manually into 18 kg boxes with extreme care and taken to the vats, where fermentation took place at controlled temperatures. Gentle pump-overs followed. Aged for 18 months in first and second-use French oak barrels, with subsequent bottle aging.
