Soalheiro Terramatter is a wine entirely different from other wines in the Soalheiro family. On the one hand, it's a return to our origins and, on the other hand, a projection into the future. Produced with minimal intervention in viticulture and winemaking, Terramatter is the genuine expression of our territory. With an intense color, expressive aroma, and complex palate, this wine reveals a strong personality and a very distinct profile, to which the early harvest and partial malolactic fermentation in chestnut barrels greatly contribute. We recommend that, before serving, the wine be gently swirled in the bottle to properly homogenize the fine lees and thus obtain a completely different tasting experience!

Exam Notes
Color: Soalheiro Terramatter has an intense golden color. Being an unfiltered wine, it appears cloudy. However, when decanted it becomes clear.
Aroma: Expressive
Taste: It has a complex flavor with vibrant vegetal notes. Its texture is silky and smooth. By gently homogenizing the fine lees in the wine, it becomes even more full-bodied.
Pairing: The evolution on the fine lees and its pronounced acidity make Terramatter a bold wine that demands to be accompanied by food. We suggest enjoying this wine with oily fish, cooked shellfish, smoked meats, lamb, turkey, or roasted vegetables. It is a wine that pairs very well with dishes that include cream sauce or mushrooms. Its flavor and texture harmonize beautifully with Asian cuisine.
Conservation: Store in a cool, dry place at a constant temperature. The bottle should be stored horizontally.
Service: Serve at a temperature between 10 and 12ºC.
Winemaking:
After manual harvesting, the Alvarinho grapes undergo three distinct production processes. One part ferments in stainless steel vats. Another undergoes alcoholic and malolactic fermentation in traditional chestnut wood barrels typical of the Minho region. The third part ferments in concrete eggs where natural bâtonnage is then performed. The final blend is made with the wines from each of these three parts, resulting in Soalheiro Terramatter. This is then bottled without filtration.
