Paredes da Beira was conquered from the Moors by D. Tedon and D. Rauzendo, Christian knights, descendants of the King of León. The Christians knew that it was customary for the Moors to bathe in the river on the morning of Saint John's Day, and they took advantage of this opportunity to attack the main castle, which was without reinforcements. D. Rauzendo came with his warriors and the capture of the castle was easy (…) then he rushed to the aid of his brother who was almost losing the battle near the Távora River. Such was the ferocity and bravery of the two brothers and the remaining Christians against the Moors, killing more than a thousand, that even the waters of the river turned red; even today that place is known as the Valley of the Thousand! Exam Notes

Color: Deep straw

Aroma: Expressive aromas of smoke, wet stone, yeast, toasted bread, and white flowers.

Palate: It has a lot of volume and structure supported by a lively and refreshing acidity.

Pairing: Enjoy with dishes that have an intense and fresh flavor, such as shellfish and oily fish. Also ideal as an accompaniment to salads.

Serving temperature: Serve at 10–12°C

Winemaking: The fresh grapes, at their ideal point of ripeness, are hand-picked into 20 kg boxes and transported to the winery where they undergo meticulous manual selection, destemming, and crushing. They are pressed in a pneumatic press, and the remaining must is decanted at 8°C for 48 hours in stainless steel tanks. Alcoholic fermentation begins at a controlled temperature in stainless steel, followed by aging in oak barrels for a further 12 months, with regular stirring of the fine lees.
