Paredes da Beira was conquered from the Moors by D. Tedon and D. Rauzendo, Christian knights, descendants of the King of León. The Christians knew that it was customary for the Moors to bathe in the river on the morning of Saint John's Day, and they took advantage of this opportunity to attack the main castle, which was without reinforcements. D. Rauzendo came with his warriors and the capture of the castle was easy (…) then he rushed to the aid of his brother who was almost losing the battle near the Távora River. Such was the ferocity and bravery of the two brothers and the remaining Christians against the Moors, killing more than a thousand, that even the waters of the river turned red; even today that place is known as the Valley of the Thousand! Exam Notes

Color: Intense ruby.

Aroma: Complex, rich and intense: notes of rockrose, resin, eucalyptus, clove and fresh red fruit (currant and cherry).

Palate: Great texture and volume, enveloped in a fresh and mineral acidity.

Pairing: Enjoy with intensely flavored dishes such as red meats, game, wood-fired roasts, and cheeses.

Serving temperature: Serve at 17–18°C.

Winemaking: Fresh grapes at their ideal point of ripeness, hand-picked into 20 kg boxes, are transported to the winery where they undergo careful manual selection, destemming and foot crushing in granite lagares, where fermentation occurs using indigenous yeasts.

Internship: At the end of fermentation, the wine was transferred to French oak barrels where it aged for 16 months.
